BBQ Burger, Caribbean Rub

This recipe is for a Burger but Caribbean rub 'Burgerdust', can be used to pep up chicken, lamb, beef or fish. Caribbean rub, as the many chilli ingredients suggest is hot but not an over powering heat. Chillis used have little heat and deep flavour. Background flavour of Allspice and Thyme.

1) Beef minced 700g (80% lean) (Get it from a butcher, they use better cut) or minced pork.
2) Stock (Good Quality Brand, chicken, beef, vegetable. Stock makes a huge difference) no alternative. Use stock.
