This creamy White Wine Caribbean Curry, is spicey hot and very morish. Its light in both colour and palate. Ingredients indigenous to the Caribbean, South American area include; Pimento Seeds, Coconut, Thyme and more than three different types of chillis. Even though this curry contains a little alcohol, most of the alcohol is ‘burnt off’. The liquid base is Coconut Milk. Coconut pieces provide a depth of texture to this quick and easy curry.

Can 400ml (Choose with Coconut content higher than 70%) or fresh Coconut and water.
3) Olive Oil,
1 tablespoon (Any will do) or Vegetable or any Nut Oil.
4) White Wine Dry
(Alcohol does not matter) or White Wine.
5) Double Cream
(Any will do) or Single Cream.
6) Stock
(Good Quality Brand, chicken, beef, vegetable. Stock makes a huge difference) no alternative. Use stock.
