Tikka spices give the mild not overpowering flavour, Coconut Milk provides the thick liquid base of the curry. Include the frozen peas from the shopping list, they add both colour and flavour to the curry. Coconut pieces provide a depth of texture to this quick and easy curry.

(Choose fresh or defrosted from frozen) or Chicken Legs or Thighs.
2) Coconut Milk Can 400ml
(Choose with Coconut content higher than 70%) or fresh Coconut and water.
3) Olive Oil, 1 tablespoon
(Any will do) or Vegetable or any Nut Oil.
4) Frozen Peas, 200g
(Petits Pois, but any will do) or Sugar Snap, Mangetout.
5) Stock
(Good Quality Brand, chicken, beef, vegetable. Stock makes a huge difference) no alternative. Use stock.
